I can’t get this song out of my head today … life is a song ..isn’t it beautiful how one song can take you back to a moment in time, like nothing else can ??!! This eggless wonder pushed me out of my comfort zone to perfect the art of cake making without eggs, a concept I took time to get used to! There really is nothing you can’t do .. if you put your mind to it ! It woke me up .. just like Avicii’s song .. happy baking ♥️
Ingredients:
All Purpose Flour – 2 cups
Cornflour – 1/2 cup
Baking powder – 2 tsp
Baking soda – 1 tsp
Salt – 1/2 tsp
Sweetened Condensed milk – 400gms
Orange juice – 1/2 cup
Water – 1/2 cup
Vinegar – 1 1/2 tbsp
Melted unsalted butter – 1 cup
Orange rind -1 tbsp
Pure Vanilla Extract – 2 tsp
Method:
Preheat oven to 175 C
Grease and flour a 9×13 inch pan or line 2 cup cake trays (24 nos.)
Sift flour, cornflour, baking powder, baking soda, salt in a bowl. Make a well and pour in condensed milk, orange juice, water, melted butter. Fold in orange rind.
Mix well and pour into a prepared tin and bake for 30 mins or until done.
Serve warm. I added a chocolate topping and dressed it up a bit as it was for a birthday celeb !
Add a pinch of love ♥️:
Soak with an orange syrup to get an ultra moist cake.
Orange soaking syrup :
Juice of 1 orange
Granulated Sugar – 60 gm
In a pan heat until the sugar melts.
Take off fire.
Add Rum – 1 tbsp .
Spoon this syrup over the warm cake. Double the syrup to make it into a pudding cake and serve with fresh custard and orange segments.
