I love non intimidating baking recipes… there is so much to do than toil in the kitchen…life is hard enough .. baking doesn’t need to be !
I love love love this recipe for it’s simplicity and flavourful fun by combining mayonnaise and egg white.
It’s so easy but the lightness of the dish is such a refreshing taste from the over used white sauce base for a fish pie ! Get creative or take notes from your mums repertoire of golden recipes ♥️🙃 !
Ingredients:
Stage 1 Cooking the fish :
Fish – 400 gms
Salt – to taste
Vinegar- 1 tsp
Pepper – 1 tsp
Split Green chilli – 2
Boil fish with the above ingredients.
Flake the fish and keep aside. Ensure all the bones are removed.
Stage 2 : assembling the vegetables/ cheese and boiled egg to make the base for the bake.
Chopped red capsicum – 1
Chopped spring onions – 5 stalks
Chopped boiled egg – 2
Grated cheese – 1/3 cup
Mix the above ingredients with the flaked fish and keep in a 12 inch baking dish.
Preheat the oven to 175C.
Egg whites – 2
Mayonnaise – 1 cup
Beat egg whites stiff, fold gently into the mayonnaise and spread over the layered fish.
Bake in a preheated oven until golden . Serve warm.
Add a pinch of love ♥️:
Sauté the fish layer in a butter garlic sauce before layering it in the baking dish . Make homemade garlic mayonnaise and not store bought !
