Now that the baking bug has bitten me, I woke up early before a much awaited Sunday with my gal pals to make them a vanilla cake with a passion fruit butter cream frosting .
I love pairing passion fruit with this tea cake ( as this cake was referred to all through my childhood ) for its pleasing, yet contrasting tanginess.
Do sandwich the cake with the butter cream for the perfect gateau.
Unsalted Butter – 3/4 cup
Granulated sugar – 3/4 cup
All purpose Flour – 1 cup
Salt- 1/8th tsp
Baking powder – 1 tsp
Passion fruit pulp – 1/4 cup
Pure Vanilla extract – 1 tsp
Preheat oven to 175 C.
Cream butter, sugar , add eggs , add vanilla extract, add sieved flour, baking powder, salt. Add spoonfuls of passion fruit pulp until you get a drop in consistency.
Bake for 20-25 mins until done.
Passion fruit butter cream
Butter – 40 gms
Icing sugar – 80 gms
Passion fruit pulp – 2 tbsps
Mix together to get a spreading consistency.
Once the cake cools, unmould and frost the cake with the passion fruit butter cream frosting.

Bake in two 6 inch round pans and layer the cakes with the butter cream frosting .
