What are the lessons Covid (now it sounds like a pet name for the dreaded guest, who now we have to befriend for our own sake!!!) continues to teach us ? For me it is .. opportunities are all around us but we notice it only when we are ready!! Isn’t it ??? Just like this yummilicious crowd pleaser that has been around for ages, but only now I decided to perfect it !

Skinless chicken pieces – 500gms
Garlic paste – 1 tbsp heaped
Ginger paste – 1 tbsp
Paprika powder – 1 tsp
Pepper powder – 1/2 tsp
Salt – as needed
Mix all the marinade ingredients and smear onto the chicken pieces and let it marinate for 2 hours.
Dredging station :
All purpose flour – 1 cup ( lightly seasoned with salt and pepper, use 1/2 cup at a time )
Beaten egg – 1
Add 2 tbsp milk and a pinch of salt. Mix well. Keep aside.
Panko breadcrumbs – 2 to 3 cups (lightly seasoned with salt and paprika powder, use 1 cup at a time ) Substitute with roughly pulsed bread crumbs, if you don’t have panko breadcrumbs.
Designate one hand to strictly be the dry hand and the other hand to strictly be the wet hand.
Step 1 : With the designated wet hand drop the marinated chicken in the flour, coat well.
Step 2 : With the same hand dip the chicken into the egg mixture. Drop the chicken into the breadcrumb mixture. Time out : wet hand, call for substitution.
Step : With the dry hand, pat the breadcrumbs into the chicken firmly. Evenly covering all sides of the chicken with the crumbs.
Regrigerate for 15-20 mins for the ingredients to bond! (This step is optional, if you are out of patience .. but it’s highly recommended. )
You can either bake or fry ..whatever mood of indulgence you are in after this step.. 😀
If you are baking :
Bake in a preheated oven to 175 C until golden and done .. flipping it once mid way. (Around 10 mins)
If you are frying :
Deep fry few pieces at a time into hot oil, don’t overcrowd the pan .. flipping once after the first 3 mins.
Add a pinch of ♥️:
Toast the breadcrumbs first before coating the chicken ! Add more flavour enhancers like a spice blend, onion powder to the marinade or mixed herbs to the crumb mixture. I personally like the classic version, absolute comfort food !
