Don’t you think a recipe has no soul and you as a cook must bring soul to the recipe ? I don’t believe there are any hard and fast rules in cooking ! There is common sense and there are things you will pick up along the way ! And this particular recipe uses stewed apples which reminds me of my grandmothers house ages back, where my resident baby cousin was fed stewed apples. He hated it whereas I used to think it was the best thing in the world ! And having gotten off a “Zoom” call with the whole “jing bang” last night.. I got inspired to weave some comfort, soul and nostalgia into my breakfast food 😍!

Ingredients :
(Serves 4)
Rolled oats – 1 cup
Full fat milk – 3/4 cup
Beaten egg – 1
Brown sugar – 1 tbsp
Melted butter – 1 tbsp
Mashed banana – 1
Cinnamon powder – 1 1/2 tsp
Chopped deseeded dates – 1 tbsp
Diced peeled apple – 1 cup
Pure Vanilla Extract – 1 tsp
Salt – 1/4 tsp
Method :
Preheat oven to 175 C.
Grease 4 ramekins and keep aside.
In a large bowl mix all the ingredients and spoon in to the prepared ramekins.
Place the ramekins in a water bath
(It’s just a pan of water placed into an oven) and bake for 25-30mins.
Stewed apple topping :
Unsalted butter – 1 tbsp
Brown sugar – 1 tbsp
Diced peeled apple – 1/2 cup
Salt – a pinch
Cinnamon – a pinch

Method :
In a saucepan on a low flame melt butter, add brown sugar, add diced apples , cinnamon and salt. Stew the apples for 5 minutes until slightly sticky. Switch off the flame.
Assembling :
Take the ramekins out from the water bath once it’s taken out of the oven. Top it with stewed apples.

Add a pinch of ♥️:
Add dried cranberries, toasted sunflower seed, almond flakes, granola to add variety and texture. Substitute with almond milk or coconut milk. Get creative 😀.
