Marble Bundt Curfew Cake

How many things would you attempt, if you knew you could not fail ? Sometimes all we need is a new perspective and therein you can choose a different outcome !

On all India curfew day to flatten the pandemic curve, instagram was flooded with baking posts. I have an aversion to following the herd, so I made a mental note to stay clear of baking. I like the road less travelled I guess, or so I thought until my daughters said they wanted to eat cake !!!! All the drool worthy CHOCOLATE cake pictures on my Instagram feed had etched my craving for chocolate cake in stone and so I was disgruntled to know they both wanted a vanilla cake😱. They who don’t agree on anything …now decides to be on team Vanilla??!! In short, a new marbled cake recipe was born to keep every sweet tooth satisfied.

Hope you enjoy making this perfect tea time cake ! In my opinion the best cakes are the ones that DO NOT need a topping ! This is a classic cake, a keeper of a recipe which I tweaked and changed to suit my mothers pantry.

Ingredients

All purpose flour – 2 1/4 cups

Baking powder – 2 1/2 tsp

Baking soda – 1/4 tsp

Softened salted butter – 3/4 cup

Granulated sugar – 1 cup

Eggs – 4 small

Flavourless yoghurt – 1/2 cup

Pure vanilla extract – 2 tsp

Cocoa Sauce :

Sieved cocoa – 3tbsp

Boiling water – 1/3 cup

Method

Make a cocoa sauce with boiling water and sieved cocoa. Stir until smooth. Add pure vanilla extract and keep aside to cool.

Preheat oven to 175 C.

Grease and dust with flour a 10 inch Bundt cake pan and keep aside.

Sieve the flour, baking powder and baking soda. Keep aside.

In a stand mixer or a hand mixie cream the salted butter until smooth. Add granulated sugar. Add eggs one at a time. Once it combines add vanilla extract. Add flour mixture and yoghurt alternatively. Scrape down the sides of the bowl with a spatula.

Divide the batter into 2 bowls. To one bowl of batter add the cocoa sauce. Mix lightly until combined.

In the prepared pan drop in spoons full of both the batter alternatively. Take a wooden skewer and give the desired marble effect.

Bake for 25-30mins until done.

Unmould once it cools . Dust with powdered sugar and serve.

Add a pinch of love ♥️:

Give a chocolate drizzle after unmoulding the cake to make it more decadent.

This cake has less sugar, if you prefer it a tad bit sweeter increase the granulated sugar by 1/2 cup.
