I spent my whole childhood wishing I was older and now I am spending my adulthood wishing I could go back to my childhood days. My fondest memories are of the 2 months of summer holidays we used to spent in Coonoor. This light, luscious and moist oil cake is reminiscent of my favourite childhood memories of Coonoor days which subsequently has become my children’s favourite memories too 😍. So when my son wanted a “track” cake for his birthday .. I got inspiration from the hairpin bends of Coonoor announcing the beginning of summer holidays !

Ingredients :
Dry Ingredients
Cocoa Powder – 1 1/2 cups
All Purpose Flour – 3 cups
Baking powder – 3 tsp
Baking soda – 1 1/2 tsp
Granulated sugar – 2 1/4 cups
Salt – 1 1/2 tsp
Wet Ingredients
Beaten Eggs – 4
Warm black coffee – 1 1/2 cups
Oil – 1/2 cups
Yoghurt – 1 1/2 cups
Pure Vanilla extract – 2 tsps
Method :
Preheat oven to 175 C.
Line two 10inch greased round pans with parchment paper and keep aside.
Sieve all the dry ingredients other than the granulated sugar.
In a large bowl add the dry ingredients (including the sugar). Stir. Using a hand mixer add the wet ingredients one at a time. Mix until smooth (3-4mins).
Divide the batter equally into the prepared cake pans. Bake for 30-35mins or until a tooth pick inserted comes out clean.
Cool on a rack and unmould.
Add your favourite topping and enjoy.

I did a crumb coating with a Kahlua butter cream frosting and used fondant for the race tracks.
