High Intensity Interval Cookies (HIIC) πŸŒπŸ‹πŸΎβ€β™€οΈ

I don’t know about you but I just don’t trust packaged food for everyday consumption. It irks me each time I see my friend polishing off a packet of cookies at every meeting. So finally, after the numerous times I said “I should send you healthy cookies”…here is the result of that. (No doubt, I am doing this more for me, so I can concentrate at the meeting rather than gun down packaged food companies in my head πŸ˜€).

And for all those ardent readers of my blog, who tell me they love reading what I write and don’t get around to making it πŸ˜‚… this cookie cannot get simpler. It takes only 5 mins to make and 15 mins to bake. It’s not only healthier but also quicker than going to the store to buy it !

Ingredients :

2 medium sized over ripe bananas

1 cup rolled oats

1/2 cup deseeded dates diced

1/2 tsp cinnamon powder

2 tbsps coconut oil

1/8 tsp (or a good pinch ) salt

Method :

1. Preheat oven to 180 degrees C.

2. In a large bowl mash the bananas. Stir in oats, salt, cinnamon powder, dates and oil.

3. Mix well. Drop a tablespoon of dough onto an ungreased baking tray. Flatten them out into the desired size, keep in mind these cookies don’t spread out.

4. Bake for 15-20 minutes in the preheated oven until light brown on the edges.

Add a pinch of love β™₯️:

Depending on the occasion you are cooking for, add some minced walnuts, chocolate bits, use melted nutty brown butter instead of coconut oil to make a more decadent version of the cookie.
