Divine whole wheat Apple and Cinnamon Crêpes 🍎

I am a day dreamer and a night thinker ! My brain works over time at night and by morning I have so much more clarity on what I want to do ! Sometimes I wake up to make notes of what I thought, perchance those thoughts flee by morn! My dearest friends get messages at all odd hours…I have a million ideas to execute after I sleep 🤷🏽‍♀️! Do you do that too ? Am I the only one in the world who does that ?

It was a revelation for me that crêpes can be made with whole wheat flour and still taste divine. I cannot believe after all these years i was sooo skeptical to take a leap of faith ! And suddenly you know it’s the time to start something new and trust the magic of new beginnings ! Feel the fear and travel through life with leaps of faith is my new motto.. ♥️

Happy cooking these divine crêpes! The best part is the pan sauce, it is to die for !

Ingredients:

Whole wheat flour – 1/2 cup

Milk – 1/2 cup

Egg – 1

Melted butter – 1 tbsp

Brown sugar – 1 tsp

Salt – 1/4 tsp

Pure Vanilla extract – 1/2 tsp

Method :

In a large bowl, whisk all the ingredients. Ensure there is no lumps. Strain the batter, if at all lumps are there.

Let it rest for 30 mins.

(While the batter is resting make the apple filling and the divine pan sauce)

When you are ready to make the crêpes:

Heat an oiled frying pan and pour a 1/4 cup of batter and tilt to coat the pan in a circular motion evenly. Cook on medium heat for 1.30 mins until slight browned on one side. Flip onto other side and cook similarly. Ideally serve warm.

Makes 5- 6 medium sized crêpes.

Apple filling

Ingredients :

Granny Smith Apple diced (with skin) – 1

Brown sugar – 1/8 cup to 1/4 cup depending on sweetness of apple.

Unsalted butter – 1 tbsp

Cinnamon – 1/2 tsp

Salt – a pinch

Lemon juice – a drop ( if needed, depending on tartiness of apple )

Method :

Heat a thick bottomed saucepan on medium heat, add brown sugar. When it starts to melt, add butter, reduce heat to low. Stir. Add minced apples. Add salt. Add cinnamon powder, lemon juice (if adding). Cook for 3-4 mins until apples are softened.

Divine Pan sauce

Ingredients :

Apple juice – 1/3 cup

Unsalted butter – 1 tbsp

Brown sugar – 1 tbsp ( if needed )

Salt – a pinch

1 tbsp – Calvados / Any apple brandy

Method :

In the same pan used for apples, add all the ingredients except butter and reduce it on a low flame. Add in the butter and keep hot.

Assembling :

Assemble apple mixture evenly onto crêpes and make into triangles. Pour the divine pan sauce over it and serve warm.

Add a pinch of ♥️:

Food science says during the resting period of the crêpe batter, starch molecules in the flour are absorbing the liquid in the batter. This causes them to swell and gives the batter a thicker, more viscous consistency. Any gluten formed during the mixing of the batter is also getting time to relax, and air bubbles are slowly working their way out. So this ensures you get melt in your mouth crêpes.

Add a dollop of whipped cream over the crêpes and top it with the divine pan sauce and more stewed apples to feel ohhh sooo right !!!
