As my little tornado with pretty eyes and a beautiful soul turns 8, I feel I learnt more from her than she has from me ! Never a dull moment with her around, as she challenges every norm in the book ! Her questions leave me speechless, teary eyed, baffled, ruminating or in fits of laughter. Like a tornado you donβt know what you are going to be hit with until itβs too late π€¨!!!!
On her birthday she knew exactly what she wanted and it was rainbow cupcakes with a rainbow swirl frosting ! And like she said β I ATE a cupcake to turn EIGHT βπ€·π½ββοΈπ€¦π½ββοΈ… (and you thought I was kidding about the tornado thing !!!)
Even though these cupcakes are a bit of an effort, itβs all worth it at the end when you bake someoneβs day (especially when itβs a special someone disguised as a tornado π) !!!

Cupcakes
Ingredients:
Unsalted softened Butter – 3/4 cup
Granulated sugar – 3/4 cup
Eggs – 2 large
All purpose flour – 1 cup
Baking powder – 1 tsp
Salt – 1/4 tsp
Pure Vanilla Essence – 1 tsp
Orange rind – 1 tbsp ( Optional )
Milk at room temperature – 1 tbsp
Food colouring – Any 6 colours
Method:
Line 2 cupcake trays that bake 12 cupcakes with liner.
( If you didnβt guess by that statement, it makes 24 peaked π§π)
Beat butter for a minute until fluffy.
Add in the sugar and beat again.
Add beaten eggs. Add vanilla essence.
Sieve flour, baking powder and salt together. Add to the batter. Add milk to get a drop in consistency . Add orange rind (optional ).
Preheat oven to 175 C at this stage.
Divide batter equally into 6 bowls. Mix any of the rainbow colours of your choice into each bowl. Mix well. Dot each liner with 6 teaspoon full of different coloured batter, ensuring the batter does not fill more than 3/4th of the cupcake liner. (Alternatively you could fill the 6 coloured batter into 6 different piping bags snipped at the end and pipe layers of different colours.)
Bake in the preheated oven for 10-12 minutes. While the first batch is baking, fill the second tray the same way and bake it once the first tray is baked.
As always, check for doneness with a toothpick inserted in the center of the cupcake.
Cool the cupcakes on a wire rack.
Rainbow frosting :
Ingredients:
Sieved confectioners sugar – 3 3/4 cup
Unsalted butter – 3/4 cup packed
Salt – 1/2 tsp
Pure Vanilla essence – 1 tsp
3 food colouring of your choice
Method :
Beat butter until softened, add the confectioners sugar and salt. Add vanilla. I made it on a very humid day and I had to add a bit more confectioners sugar. Adjust to piping consistency by adding milk to make it loose or more confectioners sugar to make it thicker.
Divide the frosting into 3 bowls. Add drops of 3 different food colours into each bowl. Mix well. Fill a piping bag fitted with a star nozzle alternatively with spoonful of the different colours of frosting. Pipe in swirls or as florets onto the cooled cupcakes.
Add a pinch of love β₯οΈ:
Add some chocolate chip bits into the cup cake batter. Instead of adding colour into the frosting, keep it white and add a crumbled rainbow cup cake on top of the white swirls to add colour.
