It is said one change can create a snow balling effect. A change eventually impacts your values, self-perception and goals. A new day…. a new you .. a new kinda recipe, time to reinvent yourself or your repertoire of recipes. I love the way when you bite into the “cheese frisbees” the texture takes you by surprise and you taste a different flavour in every bite. I love the crunch, the lightness and the creamy guacamole filling. The best part (as always🤷🏽♀️) is how easy it is to make it. If you are on lent till Easter like me ( or vegetarian by choice ) here is a must try recipe to add to your vegetarian spread. Hmmmm.. there is something about homemade food 😋♥️.
Whole wheat flour – 1/2 cup
Parmesan cheese – 1 cup
Unsalted butter – 1/2 cup
Salt- 1/4 tsp
Coarse black pepper powder – 1 tsp
Cayenne pepper – a pinch
Preheat oven to 200 C.
Sift wheat flour and salt in a bowl.
Add pepper powder and cayenne powder.
Add cheese and butter.
Rub fat into flour. Make into a ball. Roll out onto a floured surface and cut into small discs using a cookie cutter or the rim of a glass. I used shot glasses and I got 20 cheese frisbees. Arrange onto a ungreased baking tray and bake for 10-12 mins until lightly golden.
Cool and garnish with the filling of your choice.
Ripe avocado mashed – 1
Lime juice – 1/2 a lime
Tomato diced – 3 tbsp
Salt – 1/2 tsp or to taste
Onion diced – 3 tbsp
Minced cilantro – 3 tbsp
Minced garlic – 1 tbsp
Dried red chilli flakes – 1 tbsp ( optional )
Mix all the ingredients together lightly. Adjust seasoning and spoon onto the Cheese frisbees.

Use mixed cheese instead of cheddar alone. Add dried herbs. Do note when I made it the humidity was sooo high, I had to add more flour to get into a manageable rolling out consistency. So don’t take leave of your common sense when you are cooking 😀. Try different fillings like tuna/cucumber/mayo, chicken/ lettuce/candied walnuts, egg and mayo, carrot/tomato/egg and so on.
