I might as well tell you upfront and save you from guessing that I am still reeling from having watched the movie “Bohemian Rhapsody”.
This recipe is the “Queen” of cakes.. moist and tender. I love how the flavour of cocoa is balanced with the subtle tropical flavours of banana and orange. And I love the fact that Freddie Mercury endorses the story line of my life “ if it’s planned.. it’s boring.”🤔🤪

Ingredients :
Dry Ingredients :
1 3/4 cup all purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 1/2 cups granulated white sugar
Wet ingredients :
1 tbsp Orange zest
2 large eggs, at room temperature
1 cup mashed over ripe bananas
2 tsp granulated coffee mixed in 3/4 cup water and cooled
1/2 cup milk
1/2 cup flavourless oil
2 tbsp pulpy orange juice
Method :
Preheat oven to 175 C.
Take a large bowl and sieve together the flour, cocoa powder, baking powder, baking soda and salt. Add sugar. Stir. Make a well in the center and add in the remaining ingredients. Fold in. Batter will be runny. Pour into a prepared 12 inch cake tin (greased with butter and dusted with cocoa powder).
Bake for 30-35 mins until done or an inserted skewer in the center of the cake comes out clean.
Serve warm.
Add a pinch of love ♥️:
Add a tsp or two (hic) of orange liqueur into the batter.
Add a drizzle of chocolate sauce and some toasted nuts to the warm cake for added oomph.
You can serve it as dessert too, by adding a dollop of ice cream to the warm cake with chocolate sauce and praline.
