The Ultimate Chocolate Cake 🎂

Thank god she was the unconventional mother! Where sports took precedence over everything else …A mother who has taught me to stand tall and weather the storm, if I need to face the sunshine !

To the person who made baking a way of life .. who made me believe happiness is homemade ! On her birthday, I made the chocolate cake she always made for all our birthdays, the seemingly endless requests of chocolate cake orders from my friends to date ! Some recipes are keepers even when we find newer ones !

This luscious chocolate cake is the best there is ! I love light, moist cakes with an intense chocolate flavour ! Even though I have tried a dozen chocolate cake recipes I have never found one better than this !

Ingredients :

All Purpose Flour : 2 cups

Baking soda – 1 tsp

Salt – 1/4 tsp

Unsalted softened butter : 1 cup

Granulated white sugar : 1 1/4 cup

Brown sugar : 1/2 cup

Eggs – 4

Plain beaten yoghurt – 1/3 cup

Hot water – 3/4 cup

Cocoa powder – 4 tbsp heaped

Instant Coffee powder – 4 tsp

Pure Vanilla extract – 1tsp

Method :

Boil water, add coffee powder and mix well . To this add cocoa. Stir well, switch off the flame and keep aside to cool. Add vanilla extract.

Preheat oven to 175 C.

Sieve flour, baking soda and salt. Keep aside.

Beat butter and sugar until fluffy. Add eggs one at a time. Add flour, cocoa mixture and yoghurt alternatively. Scrape sides of the bowl using the spatula. Make sure to begin and end with the flour.

Pour the batter into a prepared 9 inch cake pan ( greased and dusted with flour). Bake for 30-35 mins until a skewer inserted in the center of the cake comes out clean.

Add a pinch of love ♥️:

Add a cup of chocolate chips to intensify the flavour. Add a liqueur instead of the vanilla extract. Add some orange rind.

Dust with powdered sugar and sliced strawberries to dress up the cake.
