Creamy Mac & Cheese Bites

Life’s eternal bonds are mostly visible in the simplest of things. Take the humble mac and cheese for example. Might seem a bit mundane and unexciting, but hey, by using some creative thinking even that can be as exciting and exhilarating as Trevor Noah 😀.

Ingredients :

Elbow Macaroni – 250 gms

For Cheese Sauce :

Butter – 2 tbsp

Flour – 2 tbsp

Milk – 2 cups

Cheddar cheese – 2 cups

Cream cheese – 1/2 cup

Beaten egg – 1 ( optional )

Salt and pepper to taste

Garnishing :

Garnish with bacon and parsley bits.

Or just parsley bits.

Fried/diced bacon (if using ) – 2 rashers

Parsley diced – 2tbsp

Method :

Cook pasta to just done ( al dente)as per package instructions.

Preheat oven to 200C and grease (if needed) Mini muffin trays (if you have) or regular muffin trays .

Make creamy cheese sauce by heating a medium sized pan on low flame and melting the butter. Add flour and whisk for 30 secs. Add milk and whisk until sauce starts thickening. Add beaten egg, if using at this stage. Add cheese and season with salt and pepper. Switch off flame. Your sauce should be glossy and thick. Add pasta. Mix well.

Spoon in the pasta into the prepared muffin tray and bake for 20 mins until it starts turning golden.

Unmould from muffin trays when it cools slightly and garnish with bacon bits ( if using ) and parsley bits . Serve warm.

Add a pinch of love ♥️:

Add minced garlic into the butter when melting the butter. Add Italian seasoning or any of the Mediterranean spices instead of just salt and pepper. Use whole wheat / semolina pasta to up the health quotient. Use a gruyere or smoked Gouda cheese to intensify the flavour.
