I could have you for breakfast or in the afternoon sun. If you come in varying measures of chocolate and vanilla, I would crave for you all the time. If you like both Vanilla and Chocolate and never know when you want to have what ! Make yourself this moist and rich perfect mix of vanilla with chocolate swirls and have the best of both worlds.
I made this cake for my childhood friends’ office party recently. And I have to narrate this incident where I couldn’t understand why my 7 year old (evidently) having over heard bits of the conversation was proclaiming to the world I was making a Marble cake. (Me making cake is not a big deal, it’s like opening a box of cereal really!!!) It was only when she saw the finished product I realised she assumed the order was for a MARVEL cake and was eagerly waiting to see how I was going to have super hero’s endorse the cake !!! Oh well … MARVEL-lous it could have been !

Ingredients :
All purpose flour – 250 gms
Baking powder – 2 tsp
Salt – 1/4 tsp
Unsalted Butter – 250 gms
Castor Sugar – 250 gms
Eggs – 4
Pure Vanilla extract – 1 tsp
Hot Milk – 2 tbsps
Sieved Cocoa – 2 tbsp
Coffee powder – 2 tsp mixed in 1/2 tbsp hot water
Method :
Preheat the oven to 175 C.
Prepare and grease a 10 inch cake pan, dust with flour and keep aside.
Sieve flour, baking powder, salt and keep aside.
In a bowl, cream butter and sugar until fluffy ( 2 mins ) . Add eggs one at a time. Add Vanilla. Add sieved flour mix and hot milk intermittently.
Divide batter into two bowls and add cocoa and coffee mix into one bowl. Start dropping spoon full of batter from both bowls alternatively. Use a wooden skewer or tooth pick to marble the batter gently.
Bake for 25-30 mins until done.
I like to have a marble cake plain and its best eaten the day it is made. If you want to dress it up a bit, add a chocolate ganache.
Chocolate Ganache
Ingredients :
Semi sweet chocolate chip morsels – 1 cup
Heavy cream – 1/2 cup
A splash of cognac or pure vanilla extract
Method :
Heat the cream on slow fire until it starts bubbling and pour onto the slightly softened chocolate chips ( microwave for 30 secs) . Mix until smooth and if you are patient enough beat for 5 mins until fluffy. Add a splash of cognac or vanilla extract.
Smooth onto cooled cake .
Add a pinch of love ❤️:
Ideally all the ingredients should be at room temperature. Always use high quality ingredients, don’t substitute with cheaper ingredients, the taste difference is manifold.

Hi Christy ! You can use an 8 inch pan if it’s sufficiently deep .. ensure the contents don’t fill more than half of the pan. I use a convection oven .
