Key Lime Temptress 🥧

There are some temptations you can’t resist ! You know you shouldn’t but you can’t help it ! Something that makes you feel so good shouldn’t have to be that wrong ! Try an eensie weensie slice of this lime pie and you know you are in heaven.

The light, sweet creaminess of the filling with the crunch of the base does it for me. It totally melts in your mouth. It’s spring and summer all rolled into one. It’s just the thing you want to end that perfect dinner date with.

Lemon Filling:

Egg 3 – separated

Lime juice – 1/4 cup

Cornflour – 1 tsp

Condensed milk – 3/4 tin

Crust :

Crushed digestive biscuits – 120 gms

Softened Salted butter – 60 gms

Granulated Sugar – 1/2 tbsp

Method :

Preheat oven to 175 C.

Crush digestive biscuits coarsely by placing it in a zip loc bag and using a rolling pin. Mix softened butter, sugar and crushed biscuit in a bowl.

Grease a 10 inch pie dish and press the biscuit mixture firmly to line the pie dish.

Bake for 8 mins until the base starts to brown. Cool.

Lemony filling :

Preheat oven to 175 C.

Beat egg yolk, condensed milk, cornflour mixed in lime juice and keep aside. Beat egg whites stiff and gently fold into the condensed milk mixture.

Pour over the base and bake for 10 minutes until it starts to slightly brown.


You can serve it plain or add a topping to make it more decadent like I did.

Cream cheese topping:


Cream cheese – 1/2 cup

Unsalted butter – 1 tbsp

Powdered Sugar – 1 1/2 cup

Orange rind – 2 tbsp

Orange juice – 1 tbsp

Method :

Beat all the ingredients together. Add or reduce powdered sugar according to your sweetness preference.

To Assemble :

Add the cream cheese topping lightly onto the key lime pie, add more orange rind and orange segments for garnishing if need be.
