When your soon to be 7year old thinks you can make all her cake dreams come true, you have no choice but make a sincere attempt !!!! Especially if you told her the meaning of her name is β wished for child β and she thinks she gets all that she wishes for. Oh well …each to their own .. whatever makes you happy, I always say.
This cake work(wo)manship is much easier than it looks … so if you can take a leap of faith, you wonβt be disappointed ! π

Ingredients :
All purpose flour – 200 gms
Cornflour – 50 gms
Baking powder – 1 1/2 tsp
Salt – 1/4 tsp
Sieve together and keep aside.
Unsalted softened butter – 250 gm
Granulated sugar – 250 gm
Egg separated – 5
Almond extract – 1 tsp
Milk – 1/4 cup
Edible confetti – 1/2 cup
Method :
Preheat oven to 175 C.
Grease three 8 inch round pans and dust with flour.
Sieve together the dry ingredients. Keep aside.
Cream butter first and then add sugar until fluffy for 3 minutes . Add egg yolks one at a time. Add Almond extract. Add the sieved dry ingredients a spoonful at a time. Add milk alternatively towards the end of adding the flour mix. ( always ending with the flour mix )
Beat egg whites stiff and fold into the batter.
Divide (approximately) half the batter evenly into the 3 prepared pans . ( I take a large spoon and do one spoon in each pan at a time ) . Sprinkle confetti equally into the batter in the pans . Spoon remaining batter onto the confetti . Do not mix. (or else the confetti will break and bleed)
Bake the cake until done . Around 15 mins.
Cool and unmould.
Butter cream frosting
Unsalted softened butter – 500 gms
Confectioners Sugar – 1 kg
Almond extract – 1 tsp
Piping bags – 4
Star Nozzles plus any other nozzle you have – 4 Noβs.
Icing colour gels – any 4
Method :
Cream sugar, butter and almond extract until smooth.
Assembling the 3 cakes.
Once the cake is cooled. Assemble the cake on a turn table one on top of the other, sandwiching the three cakes with butter cream frosting. Make sure the top most cake is placed bottom side up to get an even more flat top. ( I usually get flat topped cakes, so I donβt trim the cake…I am hoping you donβt need to trim the cake to get a flat top either )
Crumb coat the cake with butter cream and refrigerate for an hour. Then, add more butter cream generously and using an offset spatula remove excess frosting while turning the cake to get an even coat. Refrigerate the cake again until you prepare the different colours of icing and you place it in piping bags .

Fondant for unicorn horn , ears and eyes
Store bought white fondant – 500 gm
Edible Gold dust – smallest bottle
Paint brush – 1
Tear drop cookie cutter – 1
Water – 1/4 cup
Cornflour – 1/2 cup
Wooden Skewer – 1
Any sort of foam ( florist kind ) for the skewer to be inserted – 1
Black food gel – 1 tsp
Method :
Horn
Dust surface with cornflour and Knead fondant until smooth. Make a small ball and roll into a 8 inch long rope using ur palms. Ensure one end is slightly thicker.
Dip the paint brush in water and dampen the wooden skewer. Insert the skewer onto the foam, so it stands upright. Starting from the thicker end of the fondant, coil it onto the skewer and shape it to have a tapering effect. Mix gold dust with a few drops of water and paint the horn . Let it dry for an hour .Tadah !
Ears
Roll out a piece of fondant into a flat disc. Use a tear drop cookie and cut out 4 pieces. Cut the base of 2 tear drops to make it shorter. Dab some water onto the bigger two tear drops. Stick the smaller ones onto the bigger ones to form ears. Paint the smaller ones with gold dust. Let it dry.
Eyes
Mix black gel food colour with some fondant until you get the desired black colour. Using your hands shape into equal sized eyes . Make two v-shaped pieces for the eye lash.
Final assembly of the cake :
Place the Unicorn horn in the center of the cake by inserting the skewer. Place ears on the side of the horns. Lightly brush eyes with water and stick it onto the cake.
Use some gold dust to give a shimmer to the eyes.
