Munchkins’ Muffins ❤️

As much as it’s bad manners to keep a vacation waiting, you have to create a life you don’t need a vacation from.😊

When the kids are on their summer vacay, you need to keep repeating those lines more often than not. (..if your memory is as bad as mine….)

Gone are the days when all you needed to do was turn up at the breakfast table for breakfast.😫 I was trying hard to sneak in a work out early morn, to sneak around the sneaky holiday weight, yet find time to feed the hungry munchkins. So voila!

Here’s an express (25 mins from start to tummy), no complaints, no fuss, breakfast muffin recipe for a happy morning start for all. Bake your day…

P.S ( My teenager made this from start to finish, without fussing or messing or asking any doubts! My job was restricted to recipe creation and clicking the pic…. more incentive to add more recipes to Kids The Bake category )

Ingredients

Multigrain organic flour – 1 cup

Egg – 1

Whole fat / skimmed milk – 1 cup

Melted butter – 2 tbsp

Honey/ Pure maple syrup / Palm sugar – 1 tbsp

Salt – 1/4 tsp

Baking powder – 1 tsp

Add ons :(Use your creativity, make your own mix from these or your own staples)- Sprinkling of dark chocolate chips/ raisins/ almond flakes/ chopped walnuts / flax seeds / sun flower seeds / coconut flakes / orange rind

Method :

Preheat oven to 175 C.

Use a spoon to mix all the ingredients other than the add ons, until you get a smooth batter. If needed add a bit more milk, to get a runny consistency.

Pour into a greased muffin tray . Sprinkle the add ons.

Bake for 12- 15 mins until a tooth pick inserted in the center comes out clean. Unmould and serve warm.

FYI :

Makes 6 medium- large sized muffins with dark chocolate chips alone. If your add ons are more, than the volume proportionately increases and you can easily fill a 12 muffin tray.
