When a coffee date over sleeps and you suddenly find yourself with some spare time.. what do you do ? Make some cookies of course !!!
Baking to me is such a stress buster.
Like most of my hand picked recipes, this cookie is a no mess .. no stress kind and is not only easy to make but unbelievably tasty. This recipe is an adaptation from the book Company’s Coming !
I like the cookie because it is not so sweet and has an intense chocolate flavour which is balanced perfectly with the chocolate filling.

Ingredients for Cookie : ( Makes 45 cookies )
All purpose flour – 3/4 cup
Whole wheat flour – 3/4 cup
Softened unsalted butter – 1 cup
Brown sugar – 1/2 cup
Sifted Cocoa- 1/4 cup
Baking powder – 1/2 tsp
Salt – 1/4 tsp
Method :
Sift both the flour, cocoa powder, baking powder and salt and keep aside. Beat the butter, brown sugar and the sifted ingredients together.
Preheat oven to 175 C.
Shape the cookie dough into 1 inch balls. Arrange them 1 inch apart on a greased baking sheet. Dent each ball with a thumb. Bake for 5 mins. Take it out and dent each ball again with your thumb ( or the back of a teaspoon, if you are uncomfortable pressing it when the dough is hot ). Bake for 10 more minutes until firm. Remove cookie from cookie sheet after 5 mins and place on wire racks to cool.
Ingredients for chocolate filling :
Confectioners sugar – 1 cup
Salted butter softened – 1/4 cup
Sifted cocoa – 1/4 cup
Water – 2tbsp
Method :
Mix all the ingredients until smooth.
Assembling the Chocolate Tom Thumb :
Pipe the chocolate filling into the dents of the cooled cookie.
Add a pinch of love ❤️:
Add crushed almond slivers or colourful sprinkles onto the chocolate filling. Roll the cookie in granulated sugar after shaping cookie dough into one inch balls.
