Marmelade Cake with Orange Cream Cheese frosting ๐ŸŠ

I tend to be impulsive by nature and I started this blog literally overnight.

I never dreamt that I would project my fetishness for cooking without knives as a forerunner. ๐Ÿ˜€( I usually pretend I am engaged otherwise at the time someoneโ€™s looking at me to chop something).

This cake is a melt in your mouth cake, it is oh so good ! The blend of flavours from marmelade to orange rind to orange juice and the orange liqueur just blossoms in your mouth.

Ingredients:

All Purpose Flour – 1 1/2 cup

Baking powder – 2 tsp

Salt – 1/2 tsp

Unsalted butter – 1 cup

Castor Sugar – 1 cup

Egg separated – 3

Pure Vanilla extract – 1 tsp

Marmelade – 2 tbsp

Milk – 1/4 cup

Juice of one orange

Orange rind – 2 tbsp

Method :

Preheat oven to 175 C.

Sieve flour, baking powder and salt. Keep aside.

Beat butter and sugar . Add egg yolk. Add vanilla extract. Add Marmelade. Add orange juice. Add flour mix and milk alternatively. Add orange rind.

Beat egg whites until stiff and fold into the mix . Bake in a prepared ( greased and dusted with flour ) 8 inch pan for 30 minutes or until done.

Orange Cream Cheese Frosting

Ingredients:

Cream cheese – 1 cup

Unsalted butter – 1/8 cup

Grand Marnier liqueur – 1 tsp

Orange rind – 2 tbsp

Sieved Confectioners sugar – 1 1/4 cup

Method :

Beat cream cheese and butter together until soft. Beat in rest of the ingredients until combined.

Once the cake cools, unmould the cake and frost the cake and dot it with orange segments and toffee bits / chocolate chips.

Add a pinch of love โค๏ธ :

After taking the cake out of the oven, pork holes with a tooth pick and soak with orange syrup to enhance the flavour of the cake. Continue with frosting the cake, once it cools.

Orange Syrup

In a saucepan add 1/4 cup granulated sugar, juice of 2 oranges and melt over a low flame. Add 1/2 tsp of Grand Marnier once you take it off the flame.
