My nephew who was visiting from boarding school has given me strict instructions not to torture him by posting pictures of home baked goodies during the week. So I had to get my act together before the weekend disappeared.
The Instagram and Facebook polls made it easy for me to decide on the recipe to post – so here it is : Golden Meat Bake.
Depending on the need you can make this into a main course ,as an appetiser by baking in tart shells or as a show stopper for tea time. I love the texture you get in the first bite. It has an airy light feel and the minced meat filling is bursting with flavour, kind of like a variation of a shepherds pie. Happy cooking ❤️
Pie Shell
Ingredients:
All purpose flour – 1 1/2 cups
Salt – 1/2 tsp
Cold water – about 3 tbsp
Unsalted butter cubed – 1/2 cup
Baking powder – a pinch
Method :
In a large bowl mix all purpose flour, salt, baking powder . Add cubed butter and use finger tips to rub the fat into the flour mix until it resembles bread crumbs. Add cold water, a tablespoon at a time until you get a holding consistency .
Roll on a lightly floured surface and in the dimension of your chosen dish . Take the pie dough on the rolling pin and lightly press onto the pie dish . Prick holes with a fork and refrigerate for 15 mins.
In the mean time, Preheat oven to 200C and bake for 15 mins.
Mince meat filling :
Ingredients :
Minced Meat ( beef ) – 500 gms
Butter to sauté – 2 tbsp
Minced onion – 3/4 cup
Minced garlic – 1 tbsp
Minced ginger – 1 tsp
Water – 1/2 cup
Pepper – 1 tsp
Nutmeg powder – 1/2 tsp
Salt – 1 tsp ( as needed )
Method :
Heat a pan, add butter, sauté onions, garlic and ginger until onions are softened. Add minced meat and continue to sauté . Add water and cook the meat. Add spices and seasoning to taste.
Keep aside.
Mayonnaise
Ingredients:
Egg – 1
Salt – 1/2 tsp
Pepper – 1/2 tsp
Sugar – 1/2 tsp
Vinegar – 1 tsp
Unflavoured oil – 1/2 to 3/4 cup
Method :
Pulse all the ingredients except oil in a food processor . Pour the oil in a stream, bit by bit, until the mix coagulates to form a creamy mayo. ( It takes not more than a minute )
Assembling the bake :
Preheat the oven to 200C.
Spoon the meat filling on to the baked pie shell .
Beat 2 egg whites stiff . Fold in the prepared mayo and spoon this over the top of the meat filling.
Bake for 15 mins until the top is golden. Serve warm.
Vegetarian option :
Can substitute mincemeat with mushrooms or minced cauliflower. Avoid nutmeg powder when using mushrooms.
Add a pinch of love ❤️:
Add a meat stock instead of hot water while cooking the minced meat. Make your own mayo instead of a store bought one. It takes only a minute. Add garlic flakes and 1/2 a tsp of mustard powder to intensify the flavour.
