Banana Crumble Cake ๐ŸŒ

Not often do I have my parents and aunt dropping in for tea at the same time. My mom and aunt have greatly inspired my love for baking. My mom makes everything look easy and my aunt made it a point to buy me many baking books and cooking ingredients every time she came down from Canada.

Having an opportunity to bake for them is very exciting, as you know itโ€™s not easy to please them. So I walked up and down the pantry picking up ingredients before deciding to bake them a Banana crumble cake.

I could convert my mums dislike for banana cakes instantly and my aunt called me after she left to ask me how exactly the cake was made. I have a feeling they knew the baking genes had duly reached the next gen. โค๏ธ

Ingredients :

Dry Ingredients :
All purpose Flour – 1 1/2 cups
Baking powder – 1 1/4 tsp
Baking soda – 3/4 tsp

Brown sugar – 3/4 cup
Spice Powders:
Clove – 1/4 tsp
Nutmeg – 1/4 tsp
Cinnamon – 1/4 tsp

Wet Ingredients to mix together :
Mashed Banana – 3 medium sized
Egg – 1 lightly beaten
Any flavourless oil – 1/3 cup
Salt – 1/2 tsp
Pure Vanilla extract – 1 tsp
Milk – 1/4 cup

Crumble topping :

Brown sugar – 1/3 cup
Flour – 2 tbsp
Cold unsalted butter cubed – 1 tbsp

Salt -a pinch
Cinnamon – 1/2 tsp

Method :

Preheat oven to 175 C

Sieve dry ingredients and keep aside.
In another bowl beat together the wet ingredients.

Stir banana mixture into the flour mixture. Pour into prepared 8 inch cake pan .

Mix the crumble topping ingredients with your finger tips . Sprinkle on the cake and bake for 25 mins or until done.

Whenever you follow a recipe, always follow your foresight . Different ovens, humidity levels, different sources of ingredients, different size of baking dishes all alter the execution of the same recipe.
