This is a super special recipe as I created it today for a friends restaurant. I sent it to 6 of my friends to taste it and they thought it was amazing.
It’s the first of a “Sake ” original on this blog created with love for you .
Pure Vanilla extract – 1 tsp
Brown Sugar – 1 1/4 cup
All purpose Flour – 2 cups
Baking powder – 2 tsp
Salt – 1/4 tsp
Milk- 1 cup
Unsalted Butter- 1/2 cup
Instant coffee powder – 2 tsp
Preheat oven to 175 C .
Beat eggs until fluffy with the vanilla extract. Add sugar. Add sifted flour with baking powder and salt.
Boil milk and butter . Add instant coffee powder . Stir hot mixture into the cake batter. Mix well .
Pour batter in a greased cake tin dusted with flour.
Bake for 25-30 mins until done.
Walnut coffee glaze :
Icing/ confectioners sugar -1 cup
Cooled black coffee – 1/4
Salted Butter – 1 tbsp
Vanilla extract – 1 tsp
Chopped Walnuts – 1/4 cup
Mix icing sugar, coffee, butter. Add pure vanilla extract. Adjust to desired consistency by adding milk.
Pour the icing over the hot cake, add chopped walnuts and serve warm .

Toast the walnuts for 5 mins in an oven on 175 C. Take out of oven and let it cool, chop coarsely.
