Lazy Morning Pancakes πŸ₯ž

Pancakes and waffles were regular on our breakfast menu as kids. My sister and I looked forward to our waffle mornings.

My mum used to pair it with a jaggery syrup , which tasted so exotic.

Now my younger daughter has to have pancakes every alternate day. So I make the pancakes with wheat and you can’t tell the difference from flour.

This is a batter the kids can easily whip up on their own too. So I find my teenage daughter makes this more than me.

For lazy morning breakfasts , easy to whip up fluffy pancakes .

Pancakes / Waffle

(Makes 6 pancakes or 4 waffles )

Ingredients:

Whole wheat flour – 1 cup

Baking powder – 1 tsp

Baking soda – 1/4 tsp

Beaten Egg – 1
Milk – 1 cup
Oil – 3 tbsps
Sugar – 1/2 tbsp
Salt – a pinch

Method :

In a large mixing bowl stir all the ingredients to get a thick batter. Add more milk if needed, to get a drop in consistency.

Pour batter into the hot waffle iron, if making waffles or heat a flat pan on medium flame for fluffy pancakes. Add a dollop of batter . When the pancake starts bubbling in the center, flip it over. Cook for another 30 secs until done .

Serve warm with honey or maple syrup :

My kids love chocolate chip pancakes, so I dot the batter with few chocolate chips after I add the dollop of batter onto the pan ! It’s a sure winner with the kids.

For more adventurous days, I substitute half the quantity of wheat flour with cocoa powder and add one more tbsp of sugar to make chocolate pancakes and dust the chocolate pancakes with powdered sugar.

Of late I find by adding 1/4 tsp baking soda also helps in fluffing up the pancake even more, so do add that too.
